Yeast known for expressing thiol-type varietal aromas (Sauvignon blanc). Terroir selection. Grape varieties: Sauvignon blanc, thiol-type varieties.

  • Isolated in Bordeaux.
  • Great aptitude for expressing varietal aromas in Sauvignon blanc from the odourless precursors in the must.
  • Volume and roundness.

Recommended for:
* Wines of finesse and elegance.
* Wine with a strong volatile thiol-type varietal aromatic profile.

  • Dosage: 200 pm - 1.6 lbs/1,000 gal
  • 1 gram per 1 gallon
  • Sauvignon Blanc, Reisling, Pinot Noir, Gewurztraminer                                    

Fermentation Characteristics:

  • Alcohol tolerance: up to 14.5 % vol.
  • High nitrogen requirements
  • Fermentation temperature range: 15 - 21°C
  • Low production of volatile acidity and H2 S
