Grape Varieties: Chardonnay, Riesling, Gewurztraminer, Muscadet.

  • Isolated from the great white terroirs of Burgundy
  • POF(-) character [no vinyl phenol] formation: delicate, and clean profile
  • Srong B-glucosidase enzymatic activity

Recommended for:

  • Elegant and refined wines, particularly when aged on lees (Chardonnay).
  • Terpene aroma revelation in relevant varieties.

Fermentation Characteristics:

  • Alcohol tolerance: up to 14.5 % vol.
  • Fermentation temperature range: 16 - 20°C
  • High nitrogen requirements
  • Low production of volatile acidity and H2 S
  • Low foam production
  • Dosage: 20-30 g/hL or 1 GPG
